    Behind Ancestral Spring Salt is a family of master salt makers who have been producing pure and natural spring salt for generations, manually harvesting salt with the aid of only their expert hands and know-how—without any chemical processes or machines. The knowledge and know-how that have been passed down from generation to generation are—with nature’s help—what enable us to produce our salt.

    Because of all these reasons, Ancestral Natural Spring Salt is a product that’s the only one of its kind in the world—a true wonder of nature.

    THE FOUR ELEMENTS OF NATURE

    Earth

    The earth is where our story begins, preserving this wonder of nature for us. Thanks to the sea that covered the Iberian Peninsula in prehistoric times, specifically the Late Triassic, and its subsequent drying, salt sediments with the purity and composition common to that period were deposited in the subsoil at great depths. This is the reason why our salt is contamination free.

    Water

    Water is the bearer of this wonder of nature. On its journey through the subsoil, spring water erodes the salt deposits until it emerges on the surface in the form of a brine spring. It can be said that the Mediterranean Sea contains between 37 and 39 grams of salt per litre of water. Our spring has very high salinity, going as high as 280 grams of salt per litre of water.

    Sun

    The sun is our best ally, putting this natural marvel within reach. Thanks to the sun, water evaporates, leaving salt behind. Depending on its intensity, we get one type of salt or another as the temperature determines the speed of the drying and salt crystallisation processes. As the sun and its heat are needed to make our salt, it’s a scarce and seasonal product. The salt flats are only open in summer.

    Wind

    The wind is our chisel. It helps us form the salt crystals, giving shape to the different types of Ancestral Natural Spring Salt. Depending on its direction, the intensity with which it blows and how long its gusts last, we obtain one type of salt or another. The fact that the salt flats are sheltered within a small valley helps to channel the wind, creating a product of amazing quality which is incredibly special.

    WHY OUR SALT IS ONE OF A KIND

    Free of microplastics and nitrites

    Thanks to two key factors, our salt is completely contamination free: the strategic location of our spring (700 m above sea level and a long way away from any industry or contamination source) and the origin of the salt deposits (formed 220 million years ago).

    Free of any processing

    Our working and extraction methods date back to Roman times. We have continued the legacy, keeping it alive and respecting it generation after generation. We continue using the same technique, harvesting salt by hand, and both the knowledge acquired and the work of nature are the reasons why we are able to obtain such exceptional salt.

    Additive free

    In order to maintain the essence and purity of our salt, we do not use any process or technique to improve the end product. We neither add anti-caking agents nor use any dye or bleaching process. There is no need to wash it either to remove any possible contaminants. Our salt gets to consumers exactly how nature  created it.

    Pure and trace mineral rich

    Due to the period in which the deposits feeding our spring (Late Triassic) were formed and that the end product does not undergo any washing or alteration, our salt is especially rich in more than 84 minerals. Some of the minerals that can be found in higher concentrations in Ancestral Natural Spring Salt are potassium, magnesium, iodine, calcium or manganese, among others.
