Our most prized product. Fine flakes of hand-harvested flor de sal spring salt. This flaky texture is achieved via a slow evaporation process, of hot days and a certain amount of environmental humidity. With a southerly wind or very gentle wind, the flakes are harvested carefully when they have precipitated into the bottom of the salt pans. The harvesting has to be done very precisely to ensure the flakes don’t break. Their mineral balance is perfect, particularly rich in potassium, calcium and magnesium.
Their format allows them to be sprinkled directly with the fingers, enhancing the flavour of any dish with a delicate and natural touch. This salt is ideal for finishing off dishes that, in addition to the touch of flavour, require an additional visual element. Since they dissolve easily, they suitably enhances flavours. Perfect for fish, meat, foie, etc.
