Ancestral Salt FAQs

Origin, purity, minerals, and first purchase.

Our spring salt is born in Salinas de Oro, Navarra, from a saline spring connected to a fossilized sea from millions of years ago. We produce it using traditional methods, through natural evaporation, respecting the rhythm of the water, sun, and wind.

The difference lies in its origin and how it is obtained. We do not work with current seawater: our salt comes from an underground spring and is harvested in inland salt flats. This allows us to offer traceable salt, without additives and with a clean taste that enhances food without overpowering it.

Himalayan salt is usually a mined salt. Ours is spring salt from Navarra: it comes from underground saline water, evaporates naturally, and is artisanally produced. If you're looking for a local salt with a clear origin and no anti-caking agents, Sal Ancestral is a very different alternative.

Yes. Our salt comes from an underground spring, not from current seawater, and we use analytics to verify its purity. You can find updated information on the product sheets: we want trust to be based on origin, process, and data.

We do not add additives or anti-caking agents. It is spring salt as we obtain it from our salt flats, without treatments to modify its texture. That is why we recommend always keeping it tightly closed and away from moisture.

We publish analytics so you can check the control parameters of our salt. We prefer that you have access to data and traceability, not just a promise. You can consult this information from the product sheets.

This is not a fortified iodized salt. Any iodine it may contain is naturally occurring and does not replace a specific iodine regimen. If you need to monitor your iodine intake due to thyroid conditions, pregnancy, breastfeeding, or other medical indications, you should follow the recommendations of a healthcare professional.

It is a natural salt, without additives or anti-caking agents, with traceable origin and artisanal production. Nevertheless, it is still salt: it provides sodium and should be consumed in moderation. Its value lies in its purity, origin, and flavor, not in promising medical benefits.

Given its clean and expressive flavor, you often need less to achieve the right saltiness. We recommend starting with a pinch, tasting, and adjusting at the end, especially in simple dishes like vegetables, eggs, fish, meats, or salads.

If you want to replace your daily salt, start with Traditional Fine Salt. If you want to notice texture and finish, add Fleur de Sel or Flakes. For a complete first purchase, the Essential Pack is the simplest way to try different uses without overcomplicating things.

Which salt to choose

Fine, Flower, Scales, Liquid, Stones, and packs.

Traditional Fine Salt is our salt for everyday cooking. It blends very well into stews, broths, sauces, creams, baked goods, cooking water, and recipes where you want the salt to be evenly distributed.

Fleur de Sel is a finishing salt. Its crystals are delicate and melt smoothly on food, which is why we recommend using it at the end of the dish: meats, fish, vegetables, tomatoes, eggs, salads, and even desserts with chocolate or caramel.

Salt flakes are designed to add texture and visual appeal when finishing a dish. Use them just before serving on meats, fish, roasted vegetables, salads, foie gras, toasts, or any dish where you want a crispy touch.

Both are finishing salts, but they behave differently. Fleur de Sel is finer and more delicate; Flake Salt provides a more visible and crunchy texture. If you're looking for subtlety, choose Fleur de Sel. If you're looking for texture, choose Flake Salt.

We do not try to imitate Maldon. Our flakes come from a spring and are formed artisanally, which is why they can vary in size, shape, and thickness. This irregularity is part of their natural origin and a less industrial process.

Because we don't mass-produce identical flakes. Wind, evaporation, humidity, harvesting, and packaging can make some crystals smaller or more irregular. It's not a defect: it's part of a artisanal salt.

Liquid Salt distributes the salty taste very evenly. It works very well in salads, vinaigrettes, dressings, vegetables, meats, and fish, especially when you want to salt without concentrating crystals in a single area of the dish.

It's not just water with added salt. It's natural spring saline water, packaged for food use in liquid form. Its advantage is convenience: you spray, spread the salt more evenly, and easily control the amount.

Salt Stones are larger crystals designed to dissolve slowly. They work very well in stews, broths, long-cooking dishes, brines, and preparations where you want a gradual salt contribution.

Piedras con Pimienta (Salt with Pepper Stones) combine our spring salt with pepper for table and kitchen. They are practical when you want to season meat, vegetables, eggs, salads, or simple dishes with salt and pepper in a single step.

Kitchen use

How to make the most of each format in daily dishes.

Yes. For daily cooking, we recommend Traditional Fine Salt. To finish dishes and add texture, use Flor de Sal or Flakes. For dressings, salads, and quick applications, Liquid Salt is very convenient.

To cook meat, use Fine Salt or Rock Salt. To finish it just before serving, use Flaked Salt or Fleur de Sel. If you want a uniform and quick touch, Liquid Salt works very well on grilled or barbecued meats.

To salt before cooking, use Fine Salt. To finish grilled, baked, or steamed fish, we especially like Flor de Sal or Flaked Salt, because they add a delicate touch without overpowering the fish's flavor.

Liquid Salt is the most practical option for salads because it spreads very well in the dressing. If you also want texture, finish with some Flakes or a little Fleur de Sel just before serving.

Yes, you can use it as a natural salt without additives. For ferments like sauerkraut, it's important to weigh the salt precisely and follow your recipe's ratio. For this use, we recommend Traditional Fine Salt because it distributes better.

We do not formulate our salt as a supplement or as a medical product. If you want to prepare salt drinks for sports, fasting, hydration, or any health reason, measure the amount carefully and consult a professional if you have any doubts. Salt still provides sodium.

Yes. Fleur de Sel and Flakes work very well in desserts with contrast: chocolate, caramel, fruits, cookies, sweet pastries, or ice cream. Add them at the end to make the texture noticeable.

It depends on the grinder and the format. For grinding, Salt Stones usually make more sense. Flakes and Fleur de Sel are meant to be picked up with your fingers and used to finish a dish, not to be ground.

Packaging and Storage

Materials, humidity and conservation at home.

It depends on the product and format. We have products in glass, cardboard formats with a biodegradable or compostable inner bag, and large formats in bags. On each product page, we indicate the specific format so you know what you are buying.

In formats that include an inner bag, we use a transparent bag made from potato starch, which is compostable and biodegradable. It protects the salt during transport and storage, without resorting to a conventional plastic bag.

Store it well-sealed in a dry place, away from kitchen steam. As we don't add anti-caking agents, humidity can change its texture. If you use a glass jar, close it after each use.

Because it's a salt without anti-caking agents. Environmental humidity can compact the crystals or cause them to stick together. This does not mean the salt is spoiled, but it can change its texture; that is why it is important to store it in a dry place.

The glass jar is the most convenient format for daily use at the table or in the kitchen. If you buy a bag or box and live in a humid area, we recommend sealing the container very well or transferring the salt to an airtight jar.

Yes, the truffle chips have a more intense and aromatic flavor. If you like strong flavors, they are a very good option. If you prefer something milder, start with the chips with olive oil and spring salt.

We aim for a balanced saltiness: that the spring salt is noticeable, but without overpowering the nut. If you prefer more natural flavors, choose nuts roasted with salt over flavored versions.
